Summer Crab Salad

Kick start your summer kitchen festivities with a refreshing crab salad. It's easy and quick to make, provides you with calcium and protein, will keep you full, and tastes just great! The thinner you slice the vegetables, the better, and you can also finely dice them if you have the patience it takes.

Ingredients for salad:
Greek Yogurt - 1/3 cup
Mayonnaise - 1/4 cup
Chopped dill - 2 tbsp.
Chopped parsley - 2 tbsp.
Lemon zest - 1 tsp.
Lemon juice - 3 tbsp.
Crab meat - 1 lb. (drained and picked)
Red bell pepper - 1 (thinly sliced)
Celery - 2 stalks (thinly sliced)
Red onion - 1/2 (thinly sliced)
Romaine lettuce hearts - 6 cups (chopped)
Method of preparing the salad:
  1. Whisk the first 7 ingredients in a bowl. Fold in the rest of them, apart from the lettuce.
  2. Arrange the lettuce on a serving plate, pour the salad over and garnish with some more dill.
