No-bake Berry Energy Bites
Ingredients for Berry Energy Bites:
Oat flour - 1 2/3 cup
Berries - 1 cup (fresh or frozen)
Almond butter - 3 1/2 tbsp. (or any other nut butter)
Brown sugar - 1-2 tbsp.
Coconut flakes - 1 tbsp.
Method of preparing the Berry Energy Bites:
  1. In a large mixing bowl, mash the berries with a fork. You can also use a food processor or a blender for this step.
  2. Add the almond butter to the berries and whisk until uniform and smooth.
  3. Add the sugar and oat flour, mixing and kneading the mixture into a pliable dough.
  4. Divide the dough into 12 even pieces and roll them into balls. Then coat each energy bite in coconut.
  5. Serve immediately or store chilled in a sealable container for up to 1 week.
Chef's Tip:
Make your own oatmeal flour by simply processing some rolled oats in a blender.
