Easy Fish Pie
Ingredients for Easy Fish Pie:
White fish fillet - 14 oz. (skinless)
Smoked haddock fillet - 14 oz. (skinless)
Milk - 2 1/2 cups
Onions - 1 small (quartered)
Cloves - 4
Hard boiled eggs - 4 (peeled and sliced)
Parsley leaves - small bunch (chopped)
Butter - 3/4 stick (evenly divided)
Flour - 1/3 cup
Nutmeg - a pinch (freshly grated)
Floury potatoes - 2 lbs. (peeled and cut into large chunks)
Cheddar cheese - 1/3 cup (grated)
Method of preparing the Easy Fish Pie:
  1. Poach the fish. Transfer to a deep pan and cover with 2 cups of milk. Add the clove, onion, and bay leaves and bring to a boil. Reduce the heat and let it simmer for 8 mins.
  2. Transfer the fish onto a plate and strain the milk into a bowl. Allow it to cool. Shred the fish into large pieces in the baking dish and arrange them in an even layer.
  3. Arrange the egg slices over the fish mash and top with the chopped parsley.
  4. Melt half the butter in a small saucepan. Stir in the flour and cook for 1 min over medium heat, then remove from heat. Gradually add the milk from the bowl (from step 2). Once you have a smooth sauce, return to the heat and bring to a boil. Cook for 5 minutes while stirring continually. Remove from the heat and season with salt, pepper and a pinch of freshly grated nutmeg. Now pour over the fish.
  5. Heat oven to 400°F (200°C). Boil the potatoes for 20 mins. Drain, then season and mash with the remaining butter and 1/2 cup milk. Top the pie with the mash. Start at the edge of the dish and work your way in. Make sure you push the mash right to the edges to seal. Sprinkle over the grated cheddar and bake for 30 mins.
