Pizza Muffins

What is it about the cupcake tray that just makes everything better? For some reason, we just love small, dainty, bite-size versions of all kinds of food. Just check out this cupcake version of the bacon and eggs breakfast to see what we mean. In this recipe, you'll be enjoying pizza cupcakes. The onion are optional, but we wouldn't avoid them. Pizza Muffins
Ingredients for muffins:
Pizza dough - 1 package (alternative: crescent roll dough)
Pizza sauce - 1/2 cup
Smoked sausage - 1/4 cup
Button mushrooms - 4 (chopped)
Onions - 1 (chopped)
Mozzarella - 1/2 cup (shredded)
Salt and Pepper - as needed
Oregano - as needed
Chili flakes - as needed (optional)
Garlic powder - as needed (optional)
Basil - as needed (optional)
Cooking spray - as needed
Method of preparing the muffins:
  1. Heat oven to 375°F. Spray a cupcake baking dish with cooking spray.
  2. Work the dough into the cups. Make sure it fills the cup evenly and fully, and that there are no holes in the bottom. Trim excess.
  3. In a bowl, mix the sauce, sausages, mushrooms, onion and seasoning. You can drizzle some olive oil if you'd like.
  4. Distribute the mixture evenly in each cup. Top with mozzarella. Bake 16-18 minutes and serve immediately.
