Apple Pie Energy Bites

Another terrific snack for those of us who crave the healthier options when it comes to snacking, these apple pie bites are chalk full of vitamins while giving you a delicious snack to munch on. It has quite a few ingredients but the cooking is easy!

Apple Pie Energy Bites
Ingredients:
Rolled Oats - 2 cups (old fashioned)
Ground cinnamon - 1 tsp.
Flaxseed - 2 tbsp. (ground)
Salt - 1/2 tsp. ( )
Hazelnut - 1 tbsp. (chopped)
Walnuts - 1 tbsp. (chopped)
Almond butter - 1/2 cup
Vanilla Extract - 1 tsp.
Honey - 2 tbsp.
Cranberries - 1/4 cup (unsweetened, dried)
Granny smith apple - 1 cup (grated and tossed with the lemon juice)
Lemon juice - 1 tsp.
Method of Preparation:
  1. Stir together the oats, cinnamon, flaxseed, salt, walnuts, and hazelnuts.
  2. Stir the almond butter, honey, and vanilla extract together. Mix with the oat mixture until fully combined.
  3. Stir the apples and dried cranberries into the oat and nut butter mixture until fully combined.
  4. Using your hands or a tablespoon, form balls with the mixture. Store these energy bites in your fridge in an airtight container for up to 4 days.
